WHAT IS YACON ROOT? Yacón syrup is a natural sweetening agent made from the roots of the yacón plant which is indigenous to the Andes mountains. The yacón plant has long been known in South America for its unique nutritional properties; few calories and low in sugar. The roots themselves contain up to 50% of fructooligosaccharides (FOS), which are prebiotics that pass through the upper part of the gastrointestinal tract undigested, so have no impact on blood glucose.
